Catherine McCord is basically super mom to three adorable kids, Kenya (9), Chloe (7) and Gemma (1). She is the creator of Weelicious, an inspiring resource for parents to see how easy it is to expose children to wholesome, delicious homemade food and author of two gorgeous cookbooks. In 2015, Catherine launched One Potato, the first organic home meal delivery kit service focused specifically on the dinnertime needs of families. Using Weelicious users' most favorite recipes as well as many new ones, the company’s mission is keeping meals delicious and simple, so that every dinner appeals to both adults and kids. One Potato sends all of the ingredients pre-prepped so that every meal gets on the table in 30 minutes or less and so kids can actually help their parents make the meals… it is the best of both worlds, organic, healthy home cooking without any of the hard work or stress, can we get a “YES, PLEASE”?!

CATHERINE’S RECIPES ::

Coco Blue Nice Cream

Serves 2

Ingredients:

  • 2 cups frozen blueberries

  • 3 frozen bananas

  • 1/2 cup frozen coconut

  • 2-4 tablespoons non-dairy milk

Directions: 

1. Place all ingredients in a high powered blender or food processor, and blend until smooth and creamy.

Note: Start with 2 tablespoons of milk, and add more if your Nice Cream is too thick.

salmon sheet pan dinner

Serves 4

Ingredients:

  • 1 1/2 cups cherry tomatoes

  • 1 large fennel bulb, sliced lengthwise into steaks

  • 1 zucchini, cut into coins

  • olive oil

  • 2 lemons, halved

  • 1 1/2 pounds salmon filet, whole or cut into filets

  • kosher salt, to taste

Directions:

1. Preheat oven to 450 degrees F. 

2. Place the first 5 ingredients on a sheet pan and toss with olive oil to coat and salt to taste. Distribute the vegetables around the pan in a single layer and bake for 10 minutes.

3. Remove the sheet pan from the oven and push some of the vegetables to the side to make space for the salmon fillets. Season the salmon with salt and bake for 12-15 additional minutes (depending on the thickness of your salmon fillets).

4. Turn the broiler on for 2 minutes or until the vegetables are golden. 

5. Place salmon and vegetables on a plate and offer a lemon half for squeezing over fish and vegetables.

BREAKFAST: Pregnancy Smoothie! Even when I’m not pregnant it’s my go-to. 

LUNCH: Big ole salad which generally contains greens, cucumbers, mushrooms, sun-dried tomatoes, avocado, chicken or salmon and any roast vegetables I’ve got on hand.

DINNER:  One Potato! I love that I can make dinner in 30 minutes or less and the meals are always so healthy and DIY. 

SNACK: Granola, fresh fruit, nuts and popcorn. 

WHAT ARE YOUR FAVORITE SPOTS/RESTAURANTS TO EAT HEALTHY?

All Time (love their farmers market focused menu), L + E oyster bar and Enya Sushi.

That’s a seriously tough questions! My friends would probably say Broiled Salmon with Summer Fruit Salad

Maldon salt, yogurt and fresh produce.


WHAT IS YOUR FITNESS REGIMEN? (how often & what you do)

You don’t want to know. When you work and have 3 kids, chasing them around is my only real exercise. Woking on changing this, though as I’ve been a life long pilates and hiking lover.


WHAT IS YOUR SKINCARE ROUTINE? (products, facials, etc)

I wash my face with She Ueumura face oil and use a variety of creams and serums from True Botanicals and AnneMarie. I’ve started getting facials at HeyDay and Skin Thesis. The first time I came out of one a few months ago my husband said “wow, you look amazing”. That’s all it took for me to start going once a month or so. 


WHAT IS YOUR SELF-CARE ROUTINE?

I try to meditate with my kids at night. Even if it’s only for 5 minutes it really settles me and bonds us after a long day.

WHAT ARE YOUR FAVORITE MAKEUP/NATURAL BEAUTY PRODUCTS?

Right now I’m rotating several brands:  True Botanicals, AnnMarie, Algenisit liquid collagens and Real Purity deodorant which I’ve been using for 15 years.

Prints my husband made fro me of each of our three children’s eyes at 8 months old. I treasure them.

We Care Spa. I’ve gone several times over the past 15 years and had major shifts in my body and mind each time I’ve visited.

DESCRIBE YOUR PERFECT DAY. 

Having a cup of tea alone, my kids waking up to make a big breakfast together, going rollerskating for hours as a family and coming home to play board games in the living room by the fireplace

what is your most valuable glow tip/secret?

Take your favorite eye lash curler (I use she uemura), take a blow dryer and warm it up (touching it to make sure it’s not too hot) and curl your eyelashes. They stay like this till you wash your face and if you put on mascara it makes it look like you’re have extentions.
